Makes: 12 | Prep: 15 mins | Bake: 20 mins

Classic Vanilla Cupcakes

INGREDIENTS

  • 2 eggs
  • 125g butter, softened
  • 1 cup caster sugar
  • 2 cups self-raising flour
  • ½ cup milk
  • 1 tsp vanilla extract

METHOD

  1. Preheat the oven to 180°C and line a 12-hole muffin tray with cupcake cases.
  2. Cream the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla.
  4. Fold in the flour, alternating with the milk, until just combined.
  5. Divide the batter evenly between the cupcake cases.
  6. Bake for 18–20 minutes or until a skewer inserted into the centre comes out clean.
  7. Allow to cool completely before decorating.

Serving Suggestion: Top with buttercream frosting and sprinkles, or enjoy simply dusted with icing sugar.

  1. Preheat the oven to 180°C and grease a loaf tin.
  2. Mix together the mashed bananas, melted butter and sugar.
  3. Beat in the eggs and vanilla.
  4. Fold in the flour and cinnamon until just combined.
  5. Pour into the prepared loaf tin.
  6. Bake for 55–60 minutes or until a skewer comes out clean.
  7. Cool slightly before slicing.

Serving Suggestion: Delicious served warm with butter or toasted the next day.

  • ¼ cup cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

METHOD

  1. Preheat the oven to 180°C and line a square baking tin.
  2. Melt the butter and chocolate together and allow to cool slightly.
  3. Whisk the eggs, sugar and vanilla until smooth.
  4. Stir in the chocolate mixture.
  5. Fold in the flour, cocoa and salt until just combined.
  6. Pour into the prepared tin.
  7. Bake for 28–30 minutes for fudgy brownies.
  8. Allow to cool before cutting into squares.

INGREDIENTS

175g butter, softened
175g caster sugar
175g self-raising flour
Zest of 2 lemons

FOR THE DRIZZLE

Juice of 2 lemons
100g caster sugar

METHOD

  1. Preheat the oven to 180°C and grease a loaf tin.
  2. Cream the butter and sugar until pale and fluffy.
  3. Beat in the eggs one at a time.
  4. Fold in the flour and lemon zest.
  5. Spoon into the loaf tin and level the top.
  6. Bake for 45–50 minutes until golden and cooked through.
  7. Mix the lemon juice and sugar together.
  8. While the cake is still warm, prick it all over with a skewer and slowly pour over the drizzle.
  9. Leave to cool completely before slicing.

Serving Suggestion: Perfect with a cup of tea or coffee, garnished with thin slices of fresh lemon.
