START THE MORNING RIGHT

Makes: 12 | Prep: 15 mins | Bake: 20 mins
Classic Vanilla Cupcakes
INGREDIENTS
- 2 eggs
- 125g butter, softened
- 1 cup caster sugar
- 2 cups self-raising flour
- ½ cup milk
- 1 tsp vanilla extract
METHOD
- Preheat the oven to 180°C and line a 12-hole muffin tray with cupcake cases.
- Cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla.
- Fold in the flour, alternating with the milk, until just combined.
- Divide the batter evenly between the cupcake cases.
- Bake for 18–20 minutes or until a skewer inserted into the centre comes out clean.
- Allow to cool completely before decorating.
Serving Suggestion: Top with buttercream frosting and sprinkles, or enjoy simply dusted with icing sugar.

- Bake for 55–60 minutes or until a skewer comes out clean.
- Cool slightly before slicing.
Serving Suggestion: Delicious served warm with butter or toasted the next day.

- Melt the butter and chocolate together and allow to cool slightly.
- Whisk the eggs, sugar and vanilla until smooth.
- Stir in the chocolate mixture.
- Fold in the flour, cocoa and salt until just combined.
- Pour into the prepared tin.
- Bake for 28–30 minutes for fudgy brownies.
- Allow to cool before cutting into squares.

- Cream the butter and sugar until pale and fluffy.
- Beat in the eggs one at a time.
- Fold in the flour and lemon zest.
- Spoon into the loaf tin and level the top.
- Bake for 45–50 minutes until golden and cooked through.
- Mix the lemon juice and sugar together.
- While the cake is still warm, prick it all over with a skewer and slowly pour over the drizzle.
- Leave to cool completely before slicing.
Serving Suggestion: Perfect with a cup of tea or coffee, garnished with thin slices of fresh lemon.
